Definition#
Degree of pile fermentation in ripe pu'er. Lightly fermented ripe keeps some brightness, astringency and ageing potential and can show raw-like notes; heavily fermented ripe is very dark, smooth and stable, with brittle, charcoal-like spent leaves when overdone.
