退火
Term · Roasting
resting
Literal meaning
retreat/withdraw + fire
Definition#
Resting after roasting so the 'fire' recedes: the harsh fresh-roast character fades and the liquor thickens. Jiemian's source suggests about one to two months; heavier roasts often rest longer. Producers time releases around it, and vendors often call it 'resting'.
