走水
Term · Processing
zoushui
Literal meaning
move + water
Definition#
Moisture migration during zuoqing: water moves from stems into leaves and out of the leaf surface, so leaves alternately go limp after shaking and perk up during rest (返阳/还阳). Good 'zoushui' is considered essential for aroma; the heritage text lists 'zoushui fanyang' as a key step. The same characters appear in 走水焙, the first roasting.
