Notes#
Leaf and processing#
The monograph describes tender shoots with a bud and one or two leaves. After spreading and pan fixation, the leaves are cooled, rolled and shaped with further pan work, then dried and sorted. A final drying precedes packing. The account distinguishes these operations rather than treating all of them as a single roasting step.
Place and plant material#
Xishan is a place name, so Guiping is important to the tea’s identity. The book records both local tea populations and introduced cultivars; the geographical name does not establish one cultivar. Its historical production and environmental descriptions should not be used as specifications for every present-day garden or lot.
