苦
Term · Tasting
bitter
Literal meaning
bitter
Definition#
One of the basic tastes, distinct from the drying or puckering sensation of astringency (涩). Bitter-sensitive taste cells are distributed across the tongue, not confined to its back. In tasting notes, describe bitterness by its intensity, persistence and balance with the rest of the infusion, rather than treating its presence alone as a quality verdict.
