open-face stage

Literal meaning

open face (small / medium / large)

Definition#

Open-face stage: a shoot that has formed a dormant bud with an opened top leaf, the maturity favoured for oolong (开面采). A Guangdong draft yancha standard sets 小开面 at a top-leaf area of 20–30% of the second leaf, 中开面 at 31–70% and 大开面 at 71–100%, and picks Shuixian at small to medium open face.

Common confusions#

  • Babelcarp prints the traditional form as 開麵采; 麵 means flour or noodles, and 面 meaning face is unchanged in traditional script (MDBG), so 開面 is correct.
  • The draft standard’s English labels "slight / medium / full banjhi" borrow an Indian term for dormant shoots.
