炭焙
Term · Roasting
charcoal roasting
Literal meaning
charcoal + bake
Definition#
Charcoal roasting: roasting tea in bamboo baskets (焙笼) set over charcoal banked under ash in pits (焙窟), with temperature judged by hand. Practitioners describe 'open' and 'closed' ash-covering methods. Because charcoal is costly and labour-heavy, it is now mostly reserved for the slow refining roast (炖火), with initial drying done by machine.
