Notes#

Bud-and-leaf shaping#

The book describes a bud and one newly opening leaf, pan fixation and shaping that keeps bud and leaf close together. Basket drying follows in stages, with cooling between them. The result is a baked-dry green tea.

Reviving the tea#

The modern product follows a revival programme begun in the 1970s. The Xuancheng market regulator dates the work from 1972 and its successful recreation to 1978. Historical references to Jingting tea should therefore be distinguished from evidence of uninterrupted production of today’s named style.
