Huangshan Maofeng
Bud-and-leaf green tea from the Huangshan area of Anhui, with fine hairs and slightly curved leaf shapes.
Notes#
Leaf, season and liquor#
The municipal description emphasises tender buds with leaves, visible hairs and spring picking around Qingming and Guyu. It describes a clear, pale yellow-green infusion.
Why it is a baked green tea#
The national heritage record describes pan fixation, light rolling, a first bake and a finishing bake. The use of a pan at the start does not make it the same process as Longjing: the final drying method is the reason the tradition is grouped with baked green tea, baked green tea. Light rolling also helps preserve the recognisable bud-and-leaf form.
Name and historical accounts#
Maofeng by itself is not proof of Huangshan origin. Historical origin stories in the municipal article are not internally consistent, so no precise invention date is asserted here.
The heritage record credits Xie Zheng'an and the Xieyuda tea business in 1875. This is a named institutional account, rather than proof that every origin story or earlier use of 'Maofeng' refers to the present finished style. The word describes hairy, pointed buds and is not exclusive to this origin.
Light handling varies with the leaf#
Zhongguo mingchazhi (2000, p. 194) makes light rolling more specific: its top two quality levels receive a few further gathering movements in the fixation pan, while the next two receive brief rolling after removal and cooling. Fresh leaf of different tenderness is kept separate. The aim is to retain intact buds and leaves with a slight curve, rather than to force every lot into a tightly rolled shape. These are the book’s historical grade distinctions, not a current grading specification.
