Notes#

Origin and historical naming#

Taiping refers to the former county name associated with today’s Huangshan District. The heritage account describes broad, straight, flattened shoots; this is a separate style from Huangshan Maofeng.

The heritage record associates the tea's development with Hougang and Houkeng and names Wang Kuicheng in its account of around 1900. That is the documented heritage narrative, not independent confirmation of every award or naming legend repeated in trade descriptions.

Shaping and baking#

Picking and selection are followed by spreading, heat fixation, shaping and baking. Appearance alone cannot authenticate a seller’s claimed village or production method.

12

Large shoots, deliberate selection#

The national heritage account describes selection of strong, well-matched shoots with one bud and two leaves. The finished tea's broad, long appearance therefore should not be judged by the tiny-bud ideal used for some other green teas. Compare the leaf-only material of Lu’an Guapian and the lighter rolling of Huangshan Maofeng.

2

Why baking includes rests#

Zhongguo mingchazhi (2000, p. 231) describes hand flattening while the leaves are still pliable, followed by cooling rests between successive bakes. The rests allow moisture in the thick stems to redistribute toward the leaf surface before further drying. This explains why the broad, intact shoot needs more than a single drying pass: shaping and moisture management work together. The account describes a historical handcraft sequence, not every present-day machine-made product.
