Notes#
A square formed before the final bake#
The Ministry of Commerce's Deng Jin Ji craft record places wooden-mould forming after rolling and before baking. Thus the compact cake is part of this oolong-making route, rather than evidence that the tea is a Pu-er or white-tea cake. Check the stated weight: a small cake is not a universal brewing dose.
A bridge between Fujian traditions#
The national heritage record describes the craft as combining northern and southern Fujian oolong practice, adjusting withering and agitation to weather and leaf condition. It attributes the introduction of Shuixian plants from Shuiji to Liu Yongfa in the late Qing period, followed by local craft development. This is the heritage account's history, not an independently dated invention claim.
Same plant name, different tea#
Compare Wuyi Shuixian for a strip-style Wuyi interpretation and Shuixian for plant identity. Phoenix Dancong belongs to the separate Fenghuang Shuixian population.
Drying a cake from the inside out#
In the 2000 account, the paper-wrapped cake is turned during baking so that both faces dry evenly. Partway through, the cakes rest for several hours to let moisture migrate outward before baking resumes at lower heat. The square shape therefore creates a drying problem as well as a recognisable presentation. The book also describes an earlier hand-squeezed form that varied in size, followed by wooden moulds that made the cakes more regular (pp. 392–393). These are historical craft details, not specifications for every cake sold today.
