Definition#
The standard Chinese system that sorts all basic (non-reprocessed) tea into six groups by processing, chiefly by how far and in what way the leaf is oxidised or otherwise transformed: green, yellow, white, oolong, red (Western 'black') and dark tea. It is codified in mainland standards such as GB/T 30766-2014 and GB/T 35825-2018, which add reprocessed teas as a separate seventh group outside the six.
