Notes#
Making the tea#
Leaves are withered, rolled, loosened, oxidized and dried. A field report from Shuangling village describes this sequence through a local maker’s work. Oxidation is central to the black-tea style; the process is different from making Longjing, even where the gardens share a locality.
Name and leaf material#
The name Hongmei means red plum blossom. It does not make this a plum-flavoured tea. The Shuangling maker describes using a bud and two leaves from local seed-grown tea bushes; that account identifies his material, rather than a requirement that every Jiuqu Hongmei use one named cultivar.
