Definition#
Infusing the weighed sample in the evaluation cup and decanting it into the bowl, which starts the wet part of an evaluation; 开汤审评 is the assessment of liquor colour, aroma, taste and infused leaf. In the general method the sample (usually 3 g) is covered with boiling water at about 1:50 and timed.
