Definition#
Formal sensory evaluation of tea (茶叶感官审评): trained assessors use sight, smell, taste and touch to judge appearance, liquor colour, aroma, taste and infused leaf under fixed conditions and then combine the results into one verdict (GB/T 23776-2018, clause 3.1). GB/T 14487-2017 supplies the vocabulary and GB/T 18797 the requirements for the evaluation room.

Common confusions#
- Often treated as the same as 品茶 (appreciative tasting); 审评 compares samples side by side at a fixed ratio and records scores.
- English "cupping" comes from the black-tea and coffee trades; it is a fair gloss, but Chinese 审评 also covers inspection of the dry leaf and the spent leaf.
- Taiwan usage favours 感官品評 for the same activity.
