dry and wet evaluation

Literal meaning

dry judging / wet judging

Definition#

The two halves of an evaluation. Dry evaluation (干评, in standards 干茶审评) judges the unbrewed leaf for shape, tenderness, colour, evenness and cleanliness on a matte black dry bench; wet evaluation (湿评, in standards 开汤审评) judges liquor colour, aroma, taste and infused leaf on a matte white wet bench. Teaching texts sum it up as dry for appearance, wet for inner quality.
