Green tea formed into tightly rounded pellets. The Pingshui tradition in Zhejiang is an important regional example; Gunpowder is also the English name used in China’s national product standard for 珠茶.

Notes#
The Pingshui craft#
Pingshui, in Shaoxing’s Keqiao district, gives its name to a tradition of pearl-shaped green tea. The heritage account describes a hand-fired sequence of fixation, rolling and drying that takes more than ten hours for a batch. Its finished pellets are rounded and dense, making a sound when dropped onto a plate.
A tea that travelled#
A record compiled by Taiwan’s National Taiwan Craft Research and Development Institute documents Gunpowder made at Fuyuan Tea Factory in Longtan in the early 1960s. This surviving example adds a useful distinction: the tea’s association with Pingshui does not mean every Gunpowder tea was made there. Look for the stated origin as well as the familiar pellet shape.
