Notes#

Repeated pan work#

The Hunan provincial account describes spreading, fixation, initial rolling, a second pan firing, another rolling, a third pan firing, strip shaping and finishing to bring out the down. The repeated rolling and pan work are important to its form; this is more specific than describing the tea simply as dried young leaves.

Maojian and origin#

Maojian is a descriptive name used by several teas. Guzhang identifies this particular Hunan tradition; it is not an alias for Xinyang Maojian. The published description emphasizes green colour, tender fragrance and a fresh, mellow taste. Actual character varies with leaf material and manufacture.
