Notes#
A modern Anhua green tea#
The monograph dates its creation to 1959 and the establishment of its form to 1962. It describes rolling and rubbing the leaves on a heated shaping surface to form fine needles. This is a green-tea process, without the dark-tea pile fermentation associated with Anhua Heicha.
Material and shaping#
The geographical-indication requirements list Anhua local populations, Zhuyeqi, Bixiangzao and Xiangbolü among suitable materials. Fixation and rolling precede a further pan-drying stage, shaping and final drying. Pine needles are the visual comparison, not an added ingredient; the tea is not defined by one cultivar.
