Definition#
Heavily oxidized Taiwanese oolong made from leafhopper-bitten young shoots picked in summer (芒種 to 大暑, around the Dragon Boat Festival); after a heavy wither and tossing, the leaf is rested in a damp cloth after kill-green before rolling, giving mixed white, green, yellow, red and brown leaf and a honey, ripe-fruit aroma. TRES gives 60 % fermentation (growers report 75-85 %). Main areas are Beipu and Emei (Hsinchu), Toufen and Tongluo (Miaoli), Shiding (New Taipei) and Longtan (Taoyuan). TRES calls it 白毫烏龍 in technical use.
