Processing#
Plucking bitten shoots

Tossing
攪拌Heavy tossing (TRES).
Fixing

悶置回潤 / 靜置回潤After pan-firing, the leaf rests wrapped in a damp cloth for about 10–30 minutes, adding honey and ripe-fruit notes and reddening the leaf (TRES).

Names and ambiguities#
The "Queen named it" story
Bug-bitten tea from elsewhere
Oxidation: 50–60% or 75–85%?
Drying and later roast treatment
The Ministry of Agriculture’s published production-series outline distinguishes drying from a later grading/roasting stage. Calling every Oriental Beauty “unroasted” is therefore too categorical. Record an individual tea’s finishing treatment from its maker; do not infer it solely from the style name.
Leafhopper feeding and garden management
A Taiwanese extension summary recommends mainly non-pesticide and biological methods against other garden pests. This is cultivation guidance, not certification of every tea sold under the name. Claims about a particular farm’s practices or residues need their own records or tests.
Notes#
Regional history and names#
TRES says the tea possibly began in Hakka villages in the Japanese era and has its own class in its flavour wheel. Main areas per TRES: Shiding (New Taipei), Longtan (Taoyuan), Beipu and Emei (Hsinchu), and Toufen and Tongluo (Miaoli).
After 1945 TRES reserved the name 烏龍茶 for tea at 50–60% oxidation, with leaves "seven parts red, three parts green" (the 番庄 style). The style had succeeded in the US market by 1923, and its top grade is 椪風茶 / 東方美人 / 白毫烏龍. Two origin marks cover it: 北埔膨風茶 and 峨眉東方美人茶.
Leafhopper response in research#
An NTU thesis (2006) reported increased expression of four stress- or defence-related proteins in leafhopper-damaged leaves, alongside changes in volatiles including benzaldehyde, linalool and its oxides, methyl salicylate and cis-jasmone. These findings concern the plant’s response in the study. They are not a test authenticating every commercial tea, or a record of pesticide use in an individual garden.
The pause after fixation#
A tea-manufacturing researcher describes a distinctive resting and moisture-equalisation stage, jìngzhì huírùn (靜置回潤), between heat fixation and rolling. The sequence combines strong withering and agitation with this rest, then rolling, drying and sorting. Leafhopper feeding supplies suitable raw material, but the maker still has to develop and preserve its character through processing.
Reading the mixed colours#
The same account relates pale bud hairs and green, yellow, red and brown leaf areas to the material and its substantial oxidation. A multicoloured dry leaf is consistent with the style, but it cannot on its own authenticate a particular origin or prove a seller's insect-feeding claim. Compare Qingxin Dapang for the important plant material and Wenshan Baozhong for a different use of withering and agitation.
