Anji white tea
A green tea from Anji, Zhejiang, made from Baiye 1; the word white describes the plant material, not white-tea processing.
Notes#
Protected origin#
The published geographical-indication requirements specify Anji county and the clonal cultivar Baiye 1. The same cultivar grown elsewhere does not establish Anji origin.
Fixation and drying#
Thin leaves and thick stems make heat control especially demanding. The heritage account describes makers balancing temperature and moisture to avoid scorched leaves or reddened stems while keeping the shoots intact. Spreading is followed by fixation and straightening, then staged drying with cooling between passes.
Why a pale leaf makes green tea#
The pale shoots of Baiye 1 are made into green tea through heat fixation and drying. In White tea, the main route is withering and drying. Leaf colour and processing category describe different things; this distinction explains the apparently contradictory name Anji Baicha.
