Character#

Distinct sweet-almond or apricot-kernel (杏仁) aroma with a crisp, sweet-mellow golden-yellow infusion and pronounced old-bush rhyme (老丛韵); in Ju Duo Zai, high floral-nutty aromatics pair with fine, tightly rolled dark-brown strips.

  2. 凉青
  3. 做青
  4. 杀青
  5. 揉捻

  7. 烘焙

As in Phoenix Dancong. Small, thin leaves on Ju Duo Zai require gentler bruising (做青) and careful water walk than thick-leaved Wudong lines.

Names and ambiguities#

Ju Duo Zai, Da Wu Ye, and Ya Shi Xiang inside the almond family

T/CZTTBZ 001—2021 Appendix A.2 places both 锯剁仔 (Ju Duo Zai) and 大乌叶 (Da Wu Ye) inside 杏仁香型, and T/CZTTBZ 002—2021 cites "锯朵仔 杏仁香" as its model compound name (leaf-shape + aroma). Meanwhile, Jiemian/Chayu’s 2017 taxonomy lists 乌叶单丛 under 杏仁香 and notes 鸭屎香单丛 as its popular name—whereas trade practice and Chinese Wikipedia treat Ya Shi Xiang Dancong (silver-flower / honeysuckle aroma) as a separate category.

Notes#

Six documented mother bushes in T/CZTTBZ 001—2021#

Appendix A.2 of T/CZTTBZ 001—2021 defines 杏仁香型 as Dancong with a noticeable sweet-almond fragrance and a sweet-mellow cup, and documents six mother bushes:

1. 锯剁仔 (also written 锯朵仔, Ju Duo Zai): growing at ~1,100 m in Hucuo Village on Wudong Shan, aged over 200 years (3.8 m tall, 3.85 × 3.0 m crown, 5.5 kg peak yield). Named for its small, oval leaves with dense, sharp saw-tooth serrations; first propagated by cuttings in 1966 and now the most widely planted clone in the almond family. 2. 杏仁香 (Fengxi Wudongjiao): growing at ~850 m in Wudongjiao, Fengxi, aged over 200 years (5.73 m tall, 5.38 × 4.66 m crown, 9 kg peak yield). 3. 金鹏杏仁香: growing at ~650 m in Zimao, Fengxi, aged ~200 years (4.24 m tall, 8.6 kg peak yield). 4.

大乌叶 (Da Wu Ye): growing at ~670 m on Daluding, Fengxi, aged ~100 years (2.2 m tall), named for its glossy dark-green leaves; propagated across the town since 1981. 5. 大庵杏仁香: growing at ~950 m in Da’an Village, aged ~200 years (5.16 m tall, 5.1 × 5.7 m crown, 9.6 kg peak yield). 6. 桃仁香 (Tao Ren Xiang): growing at ~950 m in Da’an Village, aged >160 years (4.94 m tall, 11 kg peak yield), showing a peach-kernel nuance within the almond family.

Volatile profile of Ju Duo Zai in GC-MS analysis#

In Zhou Chunjuan et al.’s 2014 *Journal of Tea Science* study of 17 Fenghuang Dancong cultivars by simultaneous distillation-extraction and GC-MS, 锯朵仔 (Ju Duo Zai) clustered with 贡香, 芝兰香 and 蜜兰香 in Cluster 1 (characterized by high linalool oxides and balanced geraniol/linalool ratios), and stood out for elevated 4-terpineol (4-松油醇) alongside linalool oxide I/II and phytol. As with other Dancong aroma families, the authors emphasized that sensory aroma types arise from multi-component volatile ratios rather than a single marker compound.

What these sources support
  1. The Chaozhou geographical indication local standard DB4451/T 1—2021 defines Fenghuang Dancong as oolong tea manufactured within the protected Chaozhou area by traditional craft from lines and cultivars selected or bred from Fenghuang Shuixian (GSCT 17), categorizing finished teas into ten aroma types with physicochemical limits of ≤7.0% moisture and ≥30.0% water extract.

Scope and limits: Establishes the statutory GI specification for Chaozhou Fenghuang Dancong, whereas the voluntary national standard GB/T 30357.6-2017 defines Dancong generically without a geographic origin requirement.

  2. Zhongguo Chashu Pinzhongzhi (2001, pp. 103–104) documents Fenghuang Dancong as a collective group of 80 superior lines selected from the sexual Fenghuang Shuixian population and named after tree habit, leaf morphology, or aroma, while Appendix A.2 of T/CZTTBZ 001—2021 catalogues 136 named mother bushes across 15 aroma groups.

Scope and limits: Documents how 'Dancong' evolved from single-bush selection and separate manufacture into propagated clonal lines, meaning a modern Dancong packet is almost always clonal garden tea unless single-tree provenance is independently verified.
