Terroir#

Slope and light
Subtropical monsoon climate with distinct wet and dry seasons. Sources disagree: the city government gives 21.8 °C and 1,371.7 mm, zh-Wikipedia 20.3 °C and 1,496 mm in its text, and the 1991–2020 table 1,531.5 mm. All are valley-station figures. The land tilts from north and south down to the central Jiulong valley. Shuangyang lies in an intermontane basin (town seat 309.5 m), and Yongfu is a basin at about 750 m.

Misnaming to watch for: Inference: sold simply as 'Shuixian', so it is easily confused with Wuyi Shuixian (Minbei rock tea) and with Fenghuang Shuixian; the square paper-wrapped cake is the giveaway.

Names and ambiguities#

Founding account of the square cake (1914?)

The trade often dates the square cake to 1914 and names a Shuangyang (Zhongcun) maker. This pass could not verify the year or the name (the brief suggested 邓观金) in any accessible source. The official pages give only a folk legend set between Nanyang Beiliao and Shuangyang Zhongcun. Do not publish a founder or a year until it is sourced.

National heritage listing year

zh-Wikipedia's text says the fifth national batch in 2020, its infobox says 2021, and the China ICH Network lists 2021 (the State Council published the fifth batch in 2021).

Notes#

Zhangping became a county in 1470 and a city in 1990. It lies where the Daiyun, Daimao and Boping ranges meet, cut in two by the north branch of the Jiulong river. Locals speak the Zhangping form of Southern Min (Zhangzhou accent). Its signature tea is Zhangping Shuixian (漳平水仙, also 'square paper-wrapped tea' 方块纸包茶). The leaf is sun-withered, worked (做青), pan-fired and rolled, then pressed in a wooden mould into a flat square, wrapped in soft paper and carefully charcoal-roasted. The liquor is golden and the aroma is described as orchid- or osmanthus-like.

The heritage text says local makers combined Wuyi rock-tea and southern-Fujian Shuixian methods, judging the leaf and the weather as they go ('看青做青, 看天做青'). The core area is Nanyang town (南洋镇: about 37,000 mu of Shuixian, 5,754 t in 2025, title 'home of Chinese shuixian tea'). Shuangyang town (双洋镇) also has Shuixian as a lead industry. The city's folk legend sets the tea's beginnings between Nanyang's Beiliao (北寮) and Shuangyang's Zhongcun (中村) villages. Nanyang's Shiniudong (石牛岽) has an old tree billed as the 'Shuixian tea king'.

The collective trademark 'Zhangping Shuixian' holds a national agricultural-product GI registration (year not given in the source). Zhangping's total tea output (16,200 t in 2025) also includes other teas, notably high-mountain oolong from Yongfu (inference from the city's tourism material).
